Most of us know that okra is one of those hit-or-miss foods. Typically you either love it, or you despise it. I grew up only liking okra if it was fried, and even then it was a dish that I could only tolerate in small amounts. So, when our Horticulture Agent Kathryn Holmes decided that she would like to do a trial in our demo garden using okra I was not the most excited person in the room. However, there is plenty of staff in the office that loves okra and they were pumped to try some okra dishes. I have to admit, although I was skeptical at first, I did enjoy each of these dishes and our staff did too!

Whether you love okra or you hate it, one thing you should know is that it is nutritious! “One cup of raw okra contains only 33 calories per cup. It is an excellent source of vitamins C and K, both providing 26 percent of the daily value.” Okra – Love it or Hate it
